Hado Ginsan Kiritsuke Santoku 170mm Sakura / Cherry Handle Forged by Shogo Yamatsuka

Forged by master craftsman Shogo Yamatsuka and hand ground by expert sharpener Tadataka Maruyama, this series has a stepped grind to facilitate easy thinning with Machi on the handle in case you wish to remove it during polishing. The blade has a beautiful damascus construction utilising stainless Ginsan steel, the minimal alloying of this stainless paired with Shogo’s expert heat-treatment ensures a smooth and long-lasting edge that is a joy to resharpen. The handle is made from luxurious Japanese cherry wood.
